If you had given me that cake, I wouldn't know what to do first. Dive into it face first or shellac it for posterity to preserve its beauty.

How do you make the roses? Do you make them right on the cake, or make them on a paper and then slide them onto the cake? They are so well spaced.

It's really lovely and I'll bet that it tastes great too!

I'm always looking at cake recipes but rarely take the time to do more than the standard frosting techniques. I ran across this video and it looked easy enough. So I practiced a few times and gave it a go. and the frosting is the standard cream cheese butter cream with the addition of strawberry crunchies (freeze dried) that have been pulverized to dust in a mortar.

Each petal is made with a special tip that curls it. You go around and around placing them until you have the flower you want.

Not only are the decorations just beautiful, but the way the top layer sits so delicately on the the cream flowers on the bottom layer is well done. No mushing that I see.
I used to do quite a bit of baking in my younger days and used pastry tips etc for finishing touches, but truly Tallcakes, yours takes the cake.

The only problem I see is that the cake is chocolate. I am one of those rare birds that does not care for it. I do like the composition and think the stand is great!

Tallcakes, that's one mouth-wateringly lovely cake, presented beautifully.

When you make a cake for a neighbor and use one of your stands, do you actually trust them with it (the stand) while they finish it off? I think I'd be a nervous wreck until it was returned safely home. :nailbiting:

Also, how do you get such 'clean' looking cakes - without that peeling, flaking layer on the outside of some cakes that comes from a greased and floured pan?

I don't mind 'loaning' my stands. I have one sister who always 'forgets' to return them; one time she kept one for two years and I almost forgot about it, but remembered when delivering her b'day cake to ask about it. And sometimes I do transfer the cake to those cardboard cake rounds; it's pretty easy with small cakes like this one.

For my last job I had a 55 mile commute (one way) and often took cakes on stands for b'days and such. For transporting cakes on a stand I prepared a box by cutting a hole large enough in the top to allow the pedestal to slip thru' to allow the plateau to sit on the top of the box; then I leveled the seat as much as possible and strapped the box in with the seat belt.

Sometime I do get a bit of a crumb finish and try to brush off any excess. This time they turned out pretty clean. I usually use spray flour baking spray, and prefer the Pam baking spray; with either parchment or waxed paper bottoms.

Here's one I made for a secretary many years ago; on this one I took the 'stuff' with me and finished the cake at the office since it included whipped cream:

Thanks for divulging some of your 'secrets' ;) :) ... as if I'd ever attempt to bake a cake again in my 1950's oven which now has a mind of its own regarding temperature regulation.

^^^^ that one looks yummy too! What are the brittle-like pieces on top?
