Old Cuban Cazuela

    I have a 62 year old clay cazuela that was used to make paella. I have two questions:
    1-If I wanted to use it to make paella, what should I do (like soaking it in water) so that it can withstand the heat after not being used for almost a century.
    2-It is glazed on the inside. Is it safe to use? 62 years ago we weren't as cautious as we are today about lead.

    I remember my mother using it once since we left the island but still, it hasn't had paella in it for a very long time!

    Anna, I wouldn't take a chance that it was good for cooking.

    We have a large one, used regularly, that may be 50 plus years old. It's unglazed outside, glazed inside...and absolutely indispensible in our kitchen.

    Your concern about lead is justified, especially if children are around your table. Despair not! Test kits for lead in glazes are readily available; Amazon has them, and there are many other sources. Wash it well, follow the directions...and Good Luck!
