I had duck once, too greasy. I smelled venison but could not make myself taste it. Once at a party the host brought out appitizers......tiny broiled quail...:arghh:

I've never had straight up venison, just venison sausage. With quail, you have to beware the bird shot. Sometimes they miss a piece.

    Hi,
I love duck if it is greasy it is because it wasn't cooked right. Duck should never be greasy if it is it is like watered down pasta sauce. As to venison soak it in milk overnight and there is no "gamey" taste. When it is roasted it is very dry since there is no fat in like beef so you have to baste it with veggie oil or my favorite bacon grease. When I first met my FIL he had just came home from hunting and he shot three pheasants. I was so impressed since I know how difficult it is to even find them let alone shoot them. THEN
the truth came out. He belongs to a gun club and early in the morning they buy several dozen pheasants from a breeder, let them loose in a field, go eat breakfast and then come back and shoot them. I was so shocked, I said you were shooting chickens. If they were from a breeder, they were never wild just taken out of a cage and set free they did not know any better to run a hide. It is worse than any "canned" hunt I ever heard of. I did enjoy eating them though.

My father and uncle took our hunting dogs out for our holiday pheasants (wild!). Loved the flavor but the buckshot was annoying.

Brussels sprouts are cute, but... Kale is wretched. And Okra is like finding a salamander tail in one's soup. :(

Love duck, venison, boar, and above all -- frogs' legs. There is a restaurant in Bermuda which serves wonderful ones. And they are BIG!

Goose is the best, I'd not change one for 10 turkeys and this year I am going to push the cookery department at this home for retired antique dealer to get a goose for a change. And there is no potato finer than one roasted with the goose, in the goose fat.

I used to have a family of Cree Indians living above me.
Every fall they'd take off for 2 weeks to go home up north & lay in enough geese for the winter !

    Hi,
I like goose and rattlesnake, alligator was okay, NO beets, sprouts and okra, love most other veggies. Could never understand why sour cream is so good but sour milk is so horrible.

    Hi Shiloh,
I had a Siamese cat that loved eggs in pickled beets. She would slurp for hours. I HATE HATE them. I would make them for certain friends when they would come for dinner. My cat would hear me saying "Franny and Bob" and she would start licking her chops.

Oh Greg thats too funny:D:D My two Siamese are very finicky but my orange brat has to smell and sometimes taste everything I have. Oh,and every morning I have to go out front and pick grass for the cats. If my orange hears the word "grass" he runs to the door howling.

Pork cheeks are yummy - from either end. About the only part I can't bring myself to eat are chitlins. Anything you have to clean fecal matter out of to eat is not food. Which doesn't explain why I'll eat shrimp....
