It appears to be a modernish model of a 16th C. ship with a few liberties taken in design and decoration. I think nowadays most of these are made in the far east for export to gift and decor shops.

Galeón is Spanish for galleon, which suggests a Spanish connection. You could look for the flag, although it could be a very local flag.
The Santa Maria (Columbus), a smaller ship than yours, had a red cross like that on several of her sails, maybe that is also a sign yours is a Spanish ship:

  4. So were thinking that the ship may be old or more modern? What time frame should I be looking for and how can I find out who made it?

Date could even be 21st C. No great age. The maker is irrelevant, it is a modern decor object.

Models with caption plates bearing that syntax usually come from Spain. The inexpensive, semi-realistic historic models of that ilk started pouring out of Spain in the 1970's or maybe a bit earlier. The Artillery models of that type are more common than the ships.

Yes, a decorative object from Spain. 1960s - 1970s. Caption plate reads 16th Century Galleon so generic, not specific ship.
